Try this delicious recipe:

5 Tbsp. all-purpose flour
2 Tbsp. brown sugar
1 teaspoon baking powder
1 pinch of salt
3/4 Tbsp unsalted butter, melted
1/4 cup sour cream
1 egg
1/4 teaspoon vanilla
3 Tbsp. milk
1/4 banana, chopped (optional)
1/8 cup semi-sweet chocolate chips (optional)
1/8 cup chopped nuts (optional)

Combine all dry ingredients in mug. Add wet ingredients slowly, mixing thoroughly. Make sure mix is consistently wet throughout. Microwave 4-5 minutes depending on your microwave. Serve Warm.

You can change the muffin batter by adding; chopped banana, chocolate chips & nuts; or 1/4 cup toasted almonds, 1/4 cup dried cranberries, and 1/8 cup teaspoon almond extract; or 1/4 cup chopped dried apricots and 1/4 tablespoon poppy seeds.
